Broiled Zucchini

Travels in cooking-Broiled Zucchini


  • 1 yellow fresh zucchini
  • 1 green fresh zucchini
  • 1 medium onion
  • 2 tbsp. olive oil
  • 1 tsp. cilantro
  • 3 tbsp. chopped garlic
  • 1 tsp Italian seasoning
  • Dash of salt and pepper


  1. Preheat the broiler setting on your oven.
  2. Grease and line a baking pan with tin foil (for easier cleanup).
  3. Cut-up zucchini in slices and chop onions.  Combine the remaining ingredients, then mixing the zucchini and onions in once mixed.
  4. Layout seasoned zucchini and onions on baking pan and broil for 20-35 minutes.

Jen’s thoughts:

This is my favorite way to cook zucchini, as it as

flavorful and soft, yet crispy.  This is not only my favorite, but a favorite for almost anyone.  It pairs well with fish, chicken, potatoes and rice.

    Round zucchinni! Yum. I also add fresh tomatoes and for lunch leftovers , include a piece of lunch meat & mozza.
