Baked Granola

Baked Granola


  • 2 ½ cups regular rolled oats
  • 1 cup shredded coconut
  • ½ cup coarsely chopped almonds
  • ½ cup sesame seed, wheat germ or flax seed
  • ½ cup shelled sunflower seed
  • ½ cup honey
  • ¼ cup cooking oil
  • ½ cup snipped dried apricots
  • ½ cup dried fruit (raisins, dried apricots, dried apples, dried cranberries {which are my favorite!}


1.     Preheat over to 300-degrees Fahrenheit.

2.     Stir together oats, coconut, almonds, sesame seed (or wheat germ or flax seed) and sunflower seed.

3.     Combine honey and oats and stir into oat mixture very thoroughly.

4.     Spread out evenly in a 13 x 9 x 2 inch-baking pan.

5.     Bake at 300-degree oven for 45 minutes or till light brown.  Make sure to stir every 15 minutes.

6.     Remove from the oven and stir in dried fruits.

7.     Transfer to another pan and cool by stirring frequently to prevent lumping.

8.     Makes 6 ½ cups.

Jen’s tips:

Store in tightly covered jars or in plastic bags.  The granola will keep for more than 2 weeks or freeze in moisture vapor-proof bags.

This granola is great for traveling or a quick snack at school or work if you bag it up in sandwich size Ziploc bags.
