Microwave Italian Potatoes: Fast. Cheap. Good.
- 2 medium potatoes
- 1/2 cup Kraft Italian Dressing and Marinade
- 1 cup water
- 1 tsp salt
- 1 tsp pepper
Optional ingredients for extra flavor:
- 2 tbsp minced garlic
- 1 tsp
- ¼ cup onions (optional)
1. Cut potatoes in quarter size pieces.
2. Combine potatoes, Italian dressing, optional ingredients and water and place in a microwaveable bowl.
3. Cover the bowl and cook approximately 10-15 minutes until potatoes are soft.
Jen’s thoughts and Recommendations:
This is one of my boyfriend’s favorite recipes that I make because it fast and tastes great. I always have potatoes on hand and this recipe is exceptionally cheap because my dad is a potato farmer. For all those readers who’s dad isn’t a potato farmer, this is still a very cheap side dish or meal as well. I recommend this dish especially to college kids, as it is fast, cheap and tastes great.
Also note that I have tried using the lighter version of Italian dressing, but it just doesn’t taste remotely the same!
Healthier version of this recipe:
Leave out out the Italian dressing and use a cup more of water with seasonings.
