Ingredients

  • 1 cup whole wheat flour
  • ½ cup all-purpose flour
  • 2 tbsp. sugar
  • 2 tsp. baking powder
  • ½ tsp. salt
  • 1 egg, lightly beaten
  • 1 ¼ cups fat-free milk
  • 3 medium ripe bananas, mashed
  • 1 tsp. vanilla extract
  • 1 ½ cups fresh or frozen blueberries
  • Maple syrup, optional

Directions
1. Combine
the flours, sugar, baking powder and salt.
2. Mix
the eggs, milk, bananas and vanilla; stir into dry ingredients just until moistened.
3.
Pour batter by ¼ cupfuls onto a hot griddle coated with cooking spray; sprinkle with blueberries. Turn when bubbles form on top; cook until second side is golden brown.

Jen’s thoughts and Recommendations:
In an effort to eat healthier these days and trying to incorporate more wheat and lower the calories in my meals, I made this DELICIOUS recipe that my wonderful visiting family enjoyed on a relaxing Sunday morning. As my sister Diane, assistant chief agreed with, bananas was the secret ingredient in this recipe to make it both healthy and moist.  Although I tried without, maple syrup was a must on these pancakes!
